Granola Cereal

I finally had a chance to cross another item off of my ‘to-do’ list for the pantry.  I have been planning to make granola cereal for a few weeks now, and it’s finally finished.  I love this recipe.  It is very simple, and it tastes so good.

Granola Cereal

Dry ingredients

  • 8 cups old-fashioned oats
  • 1/2 cup coconut
  • 1/2 cup sunflower seeds
  • 1 cup chopped walnuts
  • 1 cup slivered almonds

Wet ingredients

  • 1/3 cup olive oil
  • 1 cup honey
  • 1 teaspoon vanilla extract

Pre-heat oven to 250 degrees.  Combine dry ingredients, stirring until well-dispersed.  Combine wet ingredients separately from the dry ingredients.  Stir the wet ingredients into the dry ingredients until evenly coated.  Spread out onto a cookie sheet or 9×13 pan.  Bake in oven, stirring every 15-20 minutes, for approximately 1 1/2 hours or until your liking as far as the color and crispness.  Remove from oven and spread out onto paper towels to cool.

Store in an air-tight container.  Serve with milk as a cold cereal, or even warm it up for a nice hot cereal.  This is also great as a topping for yogurt.  You can also add any type dried fruit, such as raisins or craisins, to this cereal after it has cooled.

I’m always surprised at how quickly this goes at our house.  Even the 4-year-old opts for this when breakfast comes around.  🙂
