Pumpkin Tea

Lately I’ve been trying several new “hot” drinks to warm me up on these cool fall days.  Here is one that my sister passed along to me and it is definitely a keeper!  I found that it is good both cold and hot.  It can be altered to be a light drink, or one that gives the impression of a rich indulgence.  I also like that it uses a caffeine-free herbal tea, so it is perfect for any time of day.

Pumpkin Tea

  • 4 bags Rooibos Tea
  • 16 ounces water
  • 2 Tablespoons pumpkin puree
  • 1/2 teaspoon Pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 3 pinches of salt
  • 1/8-1/4 teaspoon Stevia (optional)
  • 1 teaspoon coconut oil

Heat 16 ounces of water until almost boiling.  Steep Rooibos Tea bags until water is lukewarm.  In a blender, add steeped tea and remaining ingredients.  Blend until frothy.

Pour into a 2 quart pitcher and add water to make 2 quarts of tea.

This tea is very refreshing served over ice for a nice cold tea on a warm fall afternoon.

My favorite way to drink it is nice and hot.  Just heat in the microwave or over the stove until hot.  Add cream and a touch of sugar (I didn’t use any Stevia when making the tea).  Or, to make it even more special, add some whipped cream and a dusting of cinnamon!  It tastes so rich and satisfying on those crisp cool mornings or as an evening tea before bed.
