Grandma’s Jello Salad

What’s the one dish that makes your “Thanksgiving Dinner” complete?  For me it has to be Grandma’s Jello Salad.  For as long as I can remember, my grandmother made this salad for almost every occasion, hence the name “Grandma’s Jello Salad”.  Even after she passed away, this salad always found it’s way to the table.  Now that I have my own family, I want to keep the tradition going.  For me, it seems it’s just not Thanksgiving without it. 🙂


Grandma’s Jello Salad

  • 20 oz can crushed pineapple in juice
  • 6 oz package Strawberry Jello
  • 2 cups boiling water
  • 2 bananas, sliced
  • 1/2 cup chopped pecans
  • 8 oz cool whip, thawed

Drain pineapple, reserving the juice.  If needed, add water to the juice to make 1-1/2 cups.  Dissolve jello in boiling water.  Combine both liquids and pour into a 9 x 13 inch baking dish.  Stir in sliced bananas, chopped pecans, and 1/3 of the pineapple.  Chill in the refrigerator until set, approximately 2-3 hours.

Meanwhile, fold the remaining pineapple into the thawed cool whip.  When jello is set, frost jello with the cool whip topping.  If desired, sprinkle with additional pecans for garnish.  Chill overnight.
