Roasted Rosemary Cashews

These have become a holiday staple at our house.  I only make them once a year because they are so addictive, so I really look forward to Thanksgiving when it comes time to make them again.  They are great to set out at any holiday party.  They would also make a great gift!

Roasted Rosemary Cashews

  • 16 ounces raw cashews
  • 2 Tablespoons butter
  • 1 1/2 tablespoons brown sugar
  • 3 Tablespoons fresh rosemary, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground red pepper

The first step is to roast the cashews.  Pre-heat oven to 350 degrees.  Spread cashews onto a cookie sheet in a single layer.  Roast for 10-15 minutes stirring every 5 minutes.  Be sure to watch them carefully so they don’t burn.

In a large skillet melt butter and sugar over medium heat, stirring frequently.  Remove from heat and stir in rosemary, salt, and red pepper.  Add hot roasted cashews and stir to coat.  Spread nuts in a single layer onto the cookie sheet.  Roast for an additional 5-10 minutes until lightly browned.  Stir occasionally so they don’t burn.

Cool on parchment paper.  Store in an air-tight container.
